Spice Rubbed Chicken

I haven't blogged in ages.  I suppose life got in the way of it, but alas, here I am.  Day 16 of my current Whole30 and this is my dinner tonight.  You'll want to start by preheating your oven to 400*.


Spice Rubbed Chicken

Assorted chicken pieces (I used 2 breasts and about 7 thighs)

2 Tbsp chili powder

1 tsp cumin

1 tsp salt

1 - Dry chicken with paper towels

2 - Combine chili powder, cumin and salt.  Rub all over your chicken pieces.

3 - Sear these on medium high heat.  It was like playing tetris trying to get the chicken to fit.  Puzzles are good for your brain.

4 - Flip them once you have a golden crust on the chicken and they don't stick to your pan anymore.

5 - Pop them into the preheated oven for approx 25 minutes.  I admit, I don't really time things, I go by what my trusty thermapen says.
