Recipe - Devils on Horseback

A great snack or appetizer that taste very decadent and only take a little bit of prep.

Devils on Horseback

Fresh Chorizo or any other spicy sausage
Dates (pitted and preferably large)
Bacon slice (cut in half if using large dates, in thirds otherwise)
Toothpicks
Chili Powder (preferably smoked or chipotle)

Preheat oven to 375F




Split open a date and place 1 Tbsp of meat in the middle.










Roll a slice of bacon tightly around the date and sausage and skewer with a tooth pick.

Place on a baking tray lined with parchment or a silpat to keep from sticking and sprinkle the top with chili powder.











Bake for 20-25 minutes until bacon starts to get crispy.

Enjoy while still warm.

Recipe: Chocolate Coconut Balls

With school starting in the next couple of days I've been really thinking about snacks that I can make for our little guy for school.  Oftentimes at home we'll give snacks that contain nuts.  These chocolate coconut balls are one of our favorite snacks and are incredibly easy to make.

You'll need:
1 cup sunflower seeds (almonds if you're not making a nut free version)
1.5 cups dates
3/4 cup unsweetened shredded coconut
5 Tbsp cocoa powder
1 tsp vanilla




Put everything into a food processor.

















Run the food processor until the mix resembles coarse, wet sand.










You can either shape into balls at this point or put the mixture into the fridge for an hour until it's easier to handle and them form into balls.  These will keep for about a week in the fridge.  They won't last that long.  I promise.
